As I reflect on the Thanksgiving holiday, there is an endless list of things for which I am grateful. This year I am particularly thankful for the one on one trips I am experiencing with each of my kids. I enjoyed a fantastic weekend in San Diego with my son Callum visiting universities, taking in the lantern festival and checking out the sites. Next up, Owen and I will travel to Phoenix, where we will take in a rap concert (there’s a first for everything!). My daughter Kaia and I are still deciding how to spend our special weekend together J. I am blessed and grateful.

I asked the team to share what they were most thankful for this year:

  • Marnie is grateful there were fewer forest fires in BC over the summer 

  • Kuan is thankful for the birth of his beautiful baby girl Ella 

  • Darren is grateful for the great summer he had camping in his new trailer

  • Pam is thankful for the health and happiness of her family and friends

  • Cynthia is grateful for all the time she's been able to spend with her family and friends this year

  • Rossi is thankful that her kids still like to snuggle, and that everyone stays in bed until she's had her morning coffee J

  • Pia is feeling blessed and thankful for her family, friends and especially her chocolate lab Bentley – who always makes her smile J

Thanksgiving Weekend – Looking for a fun activity for yourself, children or grandchildren this weekend? Create your 2020 Vision Board!

This Thanksgiving I am excited to spend an afternoon with my daughter Kaia and some family friends creating our 2020 Vision Boards. If you are looking for a fun afternoon activity while the turkey is in the oven, think about creating a vision board. It is so much fun! A vision board, sometimes known as a dream board, consists of a collection of images that help you visualize the things you wish to manifest in your life. These can be material things, such as a home or a car, or situations, such as a dream job or relationship. 

Here are 10 tips to help you create and use your vision board.

  1. Consider what you wish to use to mount your images. You may have a cork board, on which you can pin your pictures, a scrapbook in which you can paste your images, or simply a large piece of cardboard on which you can make a collage. (I picked up some large sheets of construction paper from the Dollarama for $1.50/each)

  2. Decide whether you want one board for all your images, or several that you can theme. For example, one with pictures of your ideal home, one with images of your dream vacation, and so on. The scrapbook works well for this as you can use the pages for different themes.

  3. Get clear on what you really desire. This is the most important step of all. When you look at your images, it is important that they give you the feeling you will have when your manifestation is here. If your picture gives you no feeling of excitement, happiness, peace or whatever it is you want to feel, then it will not be effective in helping you to manifest and may be a clue that this is not truly a heart’s desire.

  4. Start looking for images. You may find these in newspapers, magazines, brochures, promotional booklets, calendars – in fact any kind of illustrated printed matter. You may also find pictures that you can print from websites on the internet. Cut them out and add them to your board.

  5. Consider taking your own photographs too. This can make the subject more personal. For example, you could take pictures of an area you would like to move to, the car you have just test-driven, the furniture you like in the showroom, and so on.

  6. Include some pictures that simply make you feel good. They may be pictures of an evening with friends that brings back enjoyable memories, a picture of yourself having fun in a favorite holiday destination, or simply a beautiful sunset that stirs a feeling of peace and serenity. Anything that makes you smile, or, even better, laugh out loud, is also excellent.

  7. Place your vision board somewhere prominent, so that you will see it often throughout the day. If you are out much of the time, make a mini one in a small notebook that you can keep in your purse or briefcase. The more often you see your images, the more you will magnetize your desires to you.

  8. It is most important that you get a strong, positive feeling from looking at your images. Sometimes, if you have been looking at an image for some time it can feel a bit stale. If this happens, change it so that you get a tangible good feeling again. For instance, you may still want the same car, so get an image from another angle, or in an exciting environment.

  9. Make time each day to have a concentrated look at your images. Spend a few minutes thinking about each thing you intend to manifest, feel what it will be like when it is here, how your life will change. Feel those positive changes. Imagine what you will be doing, what differences it will make to your routine, what you will be saying and thinking.

  10. Enjoy it! It is meant to be fun! It is all about aligning your vibration with the things you desire that are being held in waiting for you. So go ahead and give it a go and make your dreams a reality

Pam’s Ricotta & Honey Roasted Beets  

  • 1lb. Golden beets peeled and cut into ½ inch cubes

  • 1lb. Red beets peeled and cut into ½ inch cubes

  • 3 tbsp. Olive Oil

  • 1/2 tsp. Salt

  • 1/2cup Ricotta Cheese * you can add more cheese, it never hurts*

  • 1-2 tbsp. Honey

  • 1 tsp. Fresh rosemary finely chopped, plus more for garnish

  • Preheat oven to 375 degrees

  • Combine beets, olive oil, and ¼ tsp salt in a large zip-lock bag and toss until beets are completely coated

  • Place beets on a cookie sheet and roast for 35-40 mins. Flipping beets halfway through cooking

  • In a bowl, combine ricotta, ¼ tsp salt, honey, and rosemary. Whisk until combined and refrigerate until ready to use.

  • Serve beets warm and top with honey-ricotta mixture and sprinkle with additional rosemary, if desired. Enjoy!

** I have also made this recipe adding roasted Brussel sprouts and bacon** YUM


Rossi’s Moms Sweet Potato Pie

  • Boil 3 or 4 sweep potatoes until soft enough to puree 

  • Remove skins, and puree, adding:

  • 8 tbs butter

  • ½ cup brown sugar

  • ½ cup white sugar

  • 2 eggs

  • ¼ cup half and half cream

  • ¼ tsp cinnamon (or more to taste)

  • ¼ tsp nutmeg (or more to taste)

  • 1 tsp vanilla

  • ¼ tsp ginger (if wanted, to taste)

  • Pour into a pie shell that you have pre-baked to almost done

  • Bake the pie for 40-50 min at 350 degrees, it will be a bit jiggly when set.

  • Let cool, and serve with whip cream!
