Grilled Shrimp Tostadas

Ingredients

1 ½ lb Shrimp, raw

2 Avocados

Cilantro

Garlic

Garlic Powder

Jalapeno

Juice from 1-2 limes ( depending what you like)

Onion Powder

Red onion

Tomatoes

Black pepper

Chili powder

Salt

Cumin

12 Tostada Shells/ Corn Tortillas

For the shrimp marinade:

2 tsp of chili powder

1 tsp cumin

1 tsp oregano

1 tsp garlic

1 tsp onion powder

1 tsp salt

¼ tsp black pepper

2 tsp olive oil

1 ½ lb raw peeled shrimp

For the Guacamole:

2 avocados mashed

½ small bunch of cilantro minced

Lime juice to taste

½ tsp salt

¼ tsp pepper

For the Pico de Gallo:

3-4 tomatoes seeded & diced

1 tsp minced garlic

1 jalapeno pepper minced

½ red onion minced

½ small bunch of cilantro minced

Instructions:

  1. In a bowl, combine all the ingredients for the shrimp marinade. Toss the shrimp in the spice mixture and set aside to marry the flavors

  2. Combine all ingredients for the guacamole, mix and set aside

  3. Combine all the ingredients for the Pico de Gallo, mix and set aside

  4. Preheat grill pan or skillet over medium heat

  5. Add the shrimp to the grill pan and cook until opaque, 1-2 mins per side

  6. To serve, lay out your Tostada shells ( I like to warm my shells to crisp them up before serving)

  7. Top each with, guacamole, shrimp, and Pico de Gallo. Fresh squeeze of Lime and you are set

**There is nothing stopping you from using your favorite salsa or guacamole for this recipe, it will be delicious either way.

**Want to add more or less to this dish, I have also added black refried beans on the shell, and the more lime the better for meJ
