The arrival of December is often marked with excitement, anticipation of the holidays, and of course a little magic in the air. For those of us that leave any holiday preparation to the last minute, December can also signal a time of frustration and stress, namely with shopping and what to prepare if we are entertaining. Finding the “perfect” gift or serving a gourmet meal can sometimes leave us scrambling and feeling lost. For this issue of The Morin Monthly, we thought we would provide you with some of our favourite gift guides and recipes, so you can enjoy all of what the season has to offer.

From Christine:

I struggle with side dishes. I can always “prepare and prep” the main ahead of time, but with sides, I consider the following: guests likes/dislikes, number of ingredients (I prefer less), ease of preparation, amount of tidy up and whether or not it can be prepared ahead of time. So, the following Prosciutto wrapped asparagus with goat cheese (optional), checks off all of the above.

Cooking time 20 min.

Prep time….about 20 min…depends how many asparagus you are making.

 

Ingredients:

Asparagus

Prosciutto, (buy the package with them individually separated)

Crumbled goat cheese

 

Heat oven to 400 degrees

Cut off the bottoms of the asparagus so they are even

Cut prosciutto slice in 1/2, across the widest part

Have goat cheese handy

 

If you choose to add the goat cheese, sprinkle the crumbled goat cheese onto the prosciutto 1/2, then wrap around the middle of the asparagus. Wrap the sides of the prosciutto so they overlap.

 

Place each one on tray with parchment paper. You can use a cookie sheet, or if you want to serve at the table, an oven proof baking dish. You can sprinkle with olive oil. No salt needed, as the Prosciutto is quite salty.

 

Bake at 400 degrees for 20 minutes.

I think this festive salad salad really represents the holidays with its colours and tastes, and the best part, it is really easy to make. I love it!

I love baking. Cookies, cakes, pies, bars…the list is endless. I especially love holiday baking, the nostalgia of family recipes, the warmth it brings to the house and now being able to make memories with my children is priceless. Although most of my holiday baking comes from family recipes on hardly legible, worn index cards, this one is not: the gingerbread house We always have a lot of fun coming up with the design, building it, and decorating it….and of course, sampling all the “accoutrements.”

My wife Chelsey’s family has a tradition of making (and heartily consuming!) cinnamon rolls on Christmas morning. They are a great way to start the day and gives you energy to open all those presents under the tree!
